Gooey Camp Brownie S’mores

Ingredients
Crust
12 full-sized graham crackers
4 tablespoons melted butter
1 tablespoon sugar
Pinch of salt
Brownies
4 eggs
1 cup brown sugar
1 cup white sugar
4 tablespoons melted butter
2 tablespoons neutral oil
1/2 teaspoon kosher salt
1 teaspoon vanilla
2/3 cup cocoa powder
1 cup flour
3 cups mini marshmallows
Instructions
Preheat the grill to 350 degrees. In a bowl, crush the graham crackers into tiny crumbs. Add the melted butter, sugar, and salt. Mix well and press into a liberally buttered cast iron skillet.
To prepare the brownies, whisk the eggs, sugar, butter, oil, salt, and vanilla in a mixing bowl. Gently fold the cocoa powder and flour into the batter. It’s okay if a bit lumpy; do not overmix. Pour the brownie batter over the graham crust and place on the grill. Close the lid and cook 10-12 minutes. Add the marshmallows to the top and continue to bake another 10-12 minutes. There should be a slight wobble in the center of the brownies. Cool 30 minutes before serving. These brownies are gooey! Spoon and serve with vanilla ice cream for an extra special treat!
